This is a delicious veggie alternative to the gorgeous beef dish. Serve with rice or pasta for a filling evening meal.
Ingredients
1 onion
1 clove of gralic
1 tsp paprika
250g mushrooms
1 bag veggie mince
1 tbsp tomato puree
250ml stock
small pot of sour cream
salt and black pepper
Method
Finely chop the onion and garlic and fry in oil or butter for a few minutes until they begin to soften. Add the paprika and ensure everything's coated in the smokey goodness.
Slice the mushrooms about 1cm thick and add to the pan. Keep stirring until they have begun to brown and sizzle, then tip in the whole bag of mince, the tomato puree and the stock. Simmer, covered, for at least 10 minutes but longer won't hurt.
With 5 minutes until your rice or pasta is ready stir in the sour cream, a good pinch of salt and loads of fresh black pepper. Taste and adjust the seasoning if you need to.
I like to serve mine heaped on top of the rice or pasta in a big bowl and let everyone help themselves. A bowl of finely grated cheddar to scatter on top goes down a treat too.
