Home-made KFC

I'm not going to lie, I love KFC. But, being on a diet there is no way I could justify it. Costs quite a lot too! So, here's my guide to your very own home-made KFC dinner.




The Chicken

Take 2 boxes of chicken drumsticks (about 20) and rinse in cold water. To make the breadcrumbs put 3 slices of bread into a blender with a chicken oxo cube and a generous amount of salt and pepper. Pulse until it looks crumby. For the next bit it helps to set out a production line in a spacious bit of the kitchen. Holding the chicken by the thin bit coat it in plain flour (dust off the excess), dip in a mixture of 1 egg and a dash of milk and then coat in the breadcrumbs. Arrange on a baking tray lined with foil and spritzed with spray oil. Bake in the oven at 190c for about 35 - 40 minutes.

The Beans

Empty a tin of beans into a pan. Add a good few glugs of Lea & Perrins, a tablespoon of brown sugar, a pinch of chipotle chilli flakes (I get mine from Chillis Galore) and a tablespoon of onion chutney. Cook on a low heat for as long as you like, at least 20 minutes.

The Chips

Allow one big potato per person. Chop into chip sized pieces (leave the skin on) and put into a pan of cold, salted water. Bring to the boil and then immediately take off the heat and refresh in cold water. Heat a couple of inches of vegetable oil in a wide pan until it's really hot. Bung in the chips and fry for 5 - 10 minutes until they're lovely and brown. If you need to do several batches drain the cooked chips on some kitchen towel before transferring to an oven proof dish and put them in the bottom of the oven to stay warm.

The Sauce


In a jar mix together ketchup, vinegar, brown sugar, Lea & Perrins and chipotle chilli flakes (see above). I'll leave you to experiment with quantities as it all depends on what ketchup you have to start off with!

The Drink

You could take the easy option and just buy a big bottle of coke, but my preferred option is a sparkling elderflower drink. In a big jug make up some elderflower cordial and soda according to taste. Make sure you have plenty of ice in there and add a big sprig of fresh mint. Everyone loves this, even the kid!



Et voila! Home-made KFC for around £1.50 a portion. Not bad.

  1. Obviously you could just as easily serve this with new or jacket potatoes to be healthy, but I wanted chips!
