Quick(ish) lunch.
Chop 5 spring onions (including the green bits!), half a yellow pepper, half a red pepper, 1 clove of garlic and an inch long piece of fresh ginger and fry in a little olive oil for 5 - 10 minutes.
Meanwhile make the pastry. Rub 100g butter into 170g plain flour. When it looks like breadcrumbs add some cold water until you have a stiff dough. I don't bother rolling out, just squidge it all into a greased quiche/flan dish (I actually used a cake tin), prick the bottom with a fork and blind bake at 180c for about 10 minutes.
Add a good few handfuls of chopped mushrooms to the onion/pepper mixture and let them cook before stirring threw a few handfuls of baby spinach. When that all looks cooked check for seasoning then pour into the pastry and level off. Top with 3 beaten eggs and 50g of crumbled goats cheese.
Bake for about 15 - 20 minutes at 180c and serve warm with home-made onion chutney!
